It can be hard to know what kind of food your young baby will enjoy, so try using these specially created recipes for inspiration.

Broccoli, Cauliflower and Cheese Pasta Bake

Serves 1

Ingredients

  • 40g fusilli pasta.
  • 1-2 broccoli florets.
  • 1-2 cauliflower florets.
  • 250ml full-fat cow’s milk.
  • 3 tablespoons of olive oil.
  • 15g flour.
  • 40g cheddar cheese, grated.
  • 40g fresh breadcrumbs.

Method

Boil the fusilli pasta in unsalted water until soft. Steam the broccoli and cauliflower florets and stir in with the pasta. In the meantime, make a white sauce with the milk, oil and flour, stir continuously and when smooth and thickened, add half the cheese. Stir.

Drain the pasta, broccoli and cauliflower, and place in blender. Pour over the sauce and breadcrumbs and sprinkle over the remaining grated cheese. Bake in a preheated oven for 10-15 minutes.

Chickpea & Hummus Salad with Pitta Bread Fingers

Serves 1

Ingredients

  • 2 tablespoons of canned chickpeas, washed and rinsed.
  • 1 tbsp hummus.
  • 2-3 slices of cucumber.
  • Slice of lettuce, washed and rinsed.
  • 3-4 ripe cherry tomatoes, washed and quartered.
  • Pitta bread, toasted and sliced into small fingers.

Method

Mix the chickpeas together with the hummus. Chop up the lettuce, tomatoes and cucumber and serve as an open pitta bread sandwich or separately with cut up fingers.

Ham & Tomato Pancakes

Serves 2-3

Ingredients

  • 100g flour.
  • 150ml milk.
  • 1 egg.
  • 1 tsp olive oil.
  • 20g baked ham, sliced, chopped.
  • 1 medium tomato, sliced, quartered.

Method

Make the pancakes by beating together the flour, milk, egg and oil until you have a thickish batter. Add in the ham and tomato and stir well. Heat a little olive oil until hot then drop in the small portions of the batter into the oil. Once brown, turn over and cook on the other side. Serve with grated cheddar cheese.

Tasty Beef Hamburgers

Serves 10

Ingredients

  • 450g/1lb lean minced beef.
  • 1 onion peeled and finely chopped.
  • 1 clove of garlic.
  • 100g chopped red pepper.
  • 1 beef stock cube, grated.
  • 1/2 lightly beaten egg.
  • 50g fresh breadcrumbs.
  • 1/2 tbsp Worcestershire sauce.
  • A little flour.
  • 1 tbsp olive oil.

Method

Fry the onion, garlic and red pepper in the olive oil until soft. Using a mixing bowl, combine the sautéed vegetables together with all of the other ingredients. With floured hands, form 10 small beef hamburgers.

Fry the burgers in olive oil until brown and ensure that they are properly cooked throughout. Serve in toasted wholemeal bundy baps, with salad as garnish.
